CUBAN PORK BELLY
puffed conri - plantain puree - plantain chip - black bean puree

From Chef JC. Arroz congri is traditional Cuban black beans and rice. After cooking it like we would any other rice, we spread it out on a silpat, dehydrated it slightly, and then deep fried it to make rice cracker puffs.
